As a huge lover of Chinese food, steaming hot noodles laden with vegetables do something to my foodie soul. I see them and no one can control what happens next…..I grab a plate and pile it high with a humongous stack of that deliciousness. In goes my fork….*twirl twirl twirl* and I am soon transformed into a noodle monster with half of the noodles dangling down my smirking mouth. AAhhhhh pure bliss!
You can never have enough noodle variations and Lo mein is one of my favorite one from our nearby Chinese takeout place.
The key ingredients here are egg noodles, good-quality soy sauce, oyster sauce, mirin and that fragrant sesame oil. It’s ridiculously easy to make and perfect for the days when you feel like whipping up some dinner for the fam in more or less 15 minutes.
Try it foodies..you will fall in LO…mein with it in no time! 😉 xx
Ingredients:
- 1 pack Chinese Egg Noodles
- 2 Tbsp of Vegetable Oil + a drizzle of sesame oil
- 1 Onion, Sliced
- 1 Bell pepper, sliced
- 1 Tbsp ginger-garlic paste
- 7-8 Mushrooms, sliced
- 1 Carrot, sliced
- 1-2 Baby Bok Choy, chopped
- Some chopped green onions
- 4 Tbsp Soy Sauce
- 2 Tbsp Oyster Sauce
- 1 tbsn of Mirin
- Salt & Pepper to taste
Method:
- Boil the noodles according to the instructions on the packs. Rinse with cold water and set aside.
- In a small bowl, combine soy sauce, oyster sauce, mirin and G.G paste. Mix and set aside.
- In a large skillet, heat your vegetable oil + sesame oil.
- To hot oil, add the sliced carrots and fry for 2-3 minutes.
- Add in onions and bell peppers and fry for further 2 minutes.
- Add all the remaining vegetables to the mix and fry on high heat for 4-5 minutes. The veggies still should remain crunchy.
- Pour in your Lo mein sauce mixture and noodles. Mix well with two spatulas until everything is well combined.
- Add in the salt & pepper and adjust according to your preferance. Serve hot!

I’m not a fan of the instant noodles and prefer egg noodles to make veggie noodles at home. In fact had some for dinner today. Have no idea what mirin is.
