OMG….I AM EXCITED! It’s my first blogiversary and I just can’t believe it!!
I started this blog because I was bored. That’s right! I had too much time on my hands and that’s why hubby and my sister suggested that I compile my recipes to share it with friends and family. I signed up on WordPress and when it asked for a name, I just typed the first thing that popped in my mind- A Foodiehousewife. I thought- “I’ll just think of something better and change it later!” That never happened. The name stuck and that was the first step of the incredible journey that I am on.
One year of me investing my time and emotions into this little window inside my laptop and it has already given me so much more than I could ever imagine.
Let me tell you a not-so-little secret- I am the laziest person alive on this planet. If I am being completely honest, I have to confess that I could have worked four times more harder on this blog in this past year and get even more stupendous results but…meh. I just didn’t.
Hubby (bless his heart) keeps trying to light a fire under me, trying to make me into this person who will work six hours a day non-stop on my blog as this it was a real job and be this crazy passionate person but surprise surprise…that hasn’t happened. I just work for one hour and then spend the next one watching funny videos on Youtube. That is the reason why I am perpetually shocked at the wonderful blogging community and the people in general being so kind to my little blog inspite of such little work I put in it. THANKYOU! Thank you to all of you for the appreciative and encouraging comments that you guys have bestowed on my recipes, thanx for the features and just a big heart-felt Thank you for the constant love that ‘afoodiehousewif’ has been showered with since the very beginning…on the main blog, on Instagram and the all the other social media.
I now feel the hunger gnawing at me to do more and feel that it’s time to up my game to reach for something a little higher now. Thus, I am going for a sabbatical from blogging for atleast a couple of month, to try and work on something new and exciting. I hope it shapes up rapidly so that I can share it with all of you soon.
Today I am sharing the recipe of the fragment Lemon and Raspberry cake that I baked for my first blogiversary and it is also the first time I tried my hand at decorating a cake myself. It’s a bit messy but not too bad, right?

Ingredients:
– 1 cup granulated sugar
– 1 cup all purpose flour
– ¾ cup butter at room temperature
– 1 tsp vanilla extract
– 1 tbsp lemon zest
– 4 eggs
– 1 heaped tsp baking powder
– 1 cup fresh raspberries
– 1 pack of ready to use Vanilla Frosting
Method:
– Preheat oven to 180 degrees C and line 2 cake pans with greased parchment paper.
– In a plate, sprinkle your raspberries with some plain flour and shuffle till they are all coated in a thin layer of flour all over. This will prevent the fruit from sinking to the bottom of the pan while baking. Set aside!
– Beat butter and sugar until light and fluffy.
– In a separate bowl, beat the eggs very well. Set aside.
– Now mix some flour in the butter & sugar mixture- beat well! Then add some egg in the butter & sugar mixture -beat well! Continue this alternate cycle till u run out of flour and eggs.
– Next, put 3-4 drops of vanilla essence and the lemon extract each. Also add in your lemon zest. Blend gently together.
– Finally, throw in your raspberries and give the batter a final mix very gently so that the berries do not break.
– Divide batter evenly between the two pans and bake for 25 minutes, or until a toothpick inserted comes out clean.
– Once your cakes have completely cooled down, frost them and decorate with more fresh raspberries, almond shavings or any decorations of your choice. Enjoy!

Ooh raspberry and lemon is one of my favourite combinations. Well, congratulations on the blogiversary…your first. Always is special. What are you planning to do during this sabbatical? It is a great idea to take time off to recharge and go other things that might get neglecte with blogging… xx
