15th August this year marks 70 years of India being an Independent Nation!
Whenever I think about 15th August, my mind always transports me back to my school days, where loudspeakers used to appear only for a day, blaring loudly with the patriotic Hindi songs. We would clap during the flag-hoisting and then yawn through the rest of the ceremony, waiting for the speeches to get over with. That was the only day where we went to the school without our bags and got to play with friends before and after the program. Also, most importantly, the food at school was always more exciting than the regular days. Then, we would board the bus and merrily go off to home around four hours earlier than usual time, eager to enjoy the rest of the day. Truly, this is all that 15th August meant to us during our school and college days!
Today, it has been more than four years that hubby and I have lived outside India. Most days, we shake our heads and crib about the pollution, crime, political conditions and corruption of our nation while watching the news. On the other hand, sometimes we would be passing a random street and will get extremely over-excited on hearing a Hindi song being played in a house. Diwali, Holi, Rakhi and all the other festivals are suddenly very nostalgic days when back in India, we didn’t use to think much of them. As for the Independence day, well…..listening to the National Anthem on 15th August or any other day now instantly makes tears well up in our eyes. You get to know how much you love your country only when you miss it terribly, while living away.
India’s freedom struggle was a hard-fought one and today is a day to remember all those who sacrificed their lives to make our lives better. It is also a day to reflect on the achievements of our nation over the past 70 years.
I wanted to do a tricolor themed cake this year to pay tribute to our National Flag. Our flag consists of the colors Saffron (stands for strength and courage), White (for peace) and Green (for the fertility and growth), with a Navy blue wheel (Ashoka Chakra) in the middle of the flag, indicating Truth.
I am delighted that the cake came out to be perfect!

– 300 grams flour
– 300 grams butter (room temperature)
– 300 grams sugar
– 6 eggs
– 2-3 drops of Vanilla essence
– 1.5 teaspoons baking powder
– Green food color
– Orange food color
– Blue food color
– Ready-to-use Vanilla frosting
– Some Blueberries
– Put your oven to pre-heat at 185 degrees C.
– In a bowl, mix butter and sugar and beat till sugar dissolves and butter looks white and fluffy. Use a hand blender if u have one!
– In a separate bowl, beat the eggs very well. Set aside.
– Now mix some flour in the butter & sugar mixture- beat well. Then, add some beaten egg to it and beat well! Continue this alternate cycle till u run out of flour and eggs.
– Add in your vanilla essence and 1.5 teaspoon of baking powder in the batter and fold in gently.
– Divide your batter into three equal parts.
– To one part, add in a few drops of orange color. To the second, add the green color and let the third part be as it is. Please check the instructions for using the color at the back of its pack/bottle. The quantity used should not exceed the amount mentioned, according to the size of your cake.
– Grease your bundt cake tin with a thin coating of butter and sprinkle some flour all over.
– First, pour your Orange color uniformly into the pan. No need to adjust the batter with a spatula etc as once it gets heated, it will settle down on its own.
– Next pour in your colorless batter. DO NOT MIX BOTH THE BATTERS! Just pour into a ring on top of the first batter and let it be.
– Finally, pour your green batter on top of the two batters into a ring. Again, DO NOT MIX!
– Bake into the preheated over for around 40-45 minutes, or until the tooth-pick inserted in the middle comes out clean.
– Take out of the oven and let it cool.
– In the meanwhile, prepare your colorful frosting portions. Divide your frosting into four portions this time and add orange, green and blue food colors to the three of them respectively and mix well. Let the fourth portion be as it is.
– Once your cake cools down, invert it onto a large plate and pour your four frostings of different colors one by one in any pattern of your choice, on top of your cake.
– Place your blueberries in the space inside and serve your beautiful, Tri-colored cake to your family and friends as a colorful and meaningful dessert at your Independence day party. Enjoy!
– You can substitute the frosting with melted white chocolate.
– Do not fill your bundt cake tin till the top. Fill it to the 3/4th of its height only as it will rise a lot while baking.
